Honeycomb
Makes approx 400g
- 75g Clear Honey
- 140g Liquid Glucose
- 400g Caster Sugar
- 5 Tbsp Water
- 20g Bicarbonate of Soda
- Grease and line a baking tray with greaseproof paper.
- Place the sugar and water in a pan on a low heat until the sugar dissolves.
- Increase the heat to medium and cook until the syrup reaches 150oC
- Take the pan off the head and mix in the bicarbonate of soda. It will foam rapidly.
- Immediately Pour onto the baking tray and allow it to flow and self level.
- Allow to cool for about an hour until firm and crisp. Break into pieces to serve.
