Honeycomb

Makes approx 400g

  • 75g Clear Honey
  • 140g Liquid Glucose
  • 400g Caster Sugar
  • 5 Tbsp Water
  • 20g Bicarbonate of Soda
  1. Grease and line a baking tray with greaseproof paper.
  2. Place the sugar and water in a pan on a low heat until the sugar dissolves.
  3. Increase the heat to medium and cook until the syrup reaches 150oC
  4. Take the pan off the head and mix in the bicarbonate of soda. It will foam rapidly.
  5. Immediately Pour onto the baking tray and allow it to flow and self level.
  6. Allow to cool for about an hour until firm and crisp. Break into pieces to serve.
