Chocolate fondant
Makes 2 fondants
- 50g Unsalted Butter
- 2 Tsp Cocoa powder
- 50g Chocolate (Minimum 70% Cocoa Solids)
- 1 Egg
- 1 Egg Yolk
- 50g Caster
- 50g Plain Flour
- Icing Sugar to Dust
- Brush the inside of two ramekins with melted butter. Dust liberally with cocoa powder, shaking out any excess.
- Melt the butter and chocolate in a bowl over a pan of boiling water.
- Mix the eggs and sugar in a bowl over another pan of boiling water until the mix becomes lighter.
- Add the egg mix to the chocolate. Fold in the flour.
- Spoon the mixture into the ramekins
- Bake for 12 minutes at 160oC
