Chocolate fondant

Makes 2 fondants

  • 50g Unsalted Butter
  • 2 Tsp Cocoa powder
  • 50g Chocolate (Minimum 70% Cocoa Solids)
  • 1 Egg
  • 1 Egg Yolk
  • 50g Caster
  • 50g Plain Flour
  • Icing Sugar to Dust
  1. Brush the inside of two ramekins with melted butter. Dust liberally with cocoa powder, shaking out any excess.
  2. Melt the butter and chocolate in a bowl over a pan of boiling water.
  3. Mix the eggs and sugar in a bowl over another pan of boiling water until the mix becomes lighter.
  4. Add the egg mix to the chocolate. Fold in the flour.
  5. Spoon the mixture into the ramekins
  6. Bake for 12 minutes at 160oC
