Makes about 7 rolls
- 15g Yeast
- 350g Warm Water
- 220ml Guinness
- 275g Strong Flour
- 100g Wholemeal Flour
- 20mls Olive oil
- 25g Butter
- Pinch of Sugar
- Pinch of Salt
- Add the yeast to the water and mix until the yeast is dissolved.
- In a bowl add the strong flour, wholemeal flour, salt, and sugar.
- Rub in the butter.
- In a well in the centre of the flour add the water, olive oil and Guinness. Mix until a dough is formed.
- Turn out the dough onto a clean surface and knead for about 10 minutes.
- Put the dough in a clean bowl and cover with clingfilm or a clean tea towel. Leave to prove until doubled in size.
- Split the dough into 100g balls. Roll into smooth rolls and place on a lightly greased baking tray.
- Leave for a second prove for about 30 minutes.
- Lightly dust with flour and place in a preheated oven at 200oC for 25 minutes.
